Probably the apricot or quince is intended by the word, as Palestine was too hot for the growth of apples proper. It is enumerated among the most valuable trees of Palestine (Joel 1:12), and frequently referred to in Canticles, and noted for its beauty (2:3, 5; 8:5). There is nothing to show that it was the "tree of the knowledge of good and evil." Dr. Tristram has suggested that the apricot has better claims than any other fruit-tree to be the apple of Scripture. It grows to a height of 30 feet, has a roundish mass of glossy leaves, and bears an orange coloured fruit that gives out a delicious perfume. The "apple of the eye" is the Heb. _ishon_, meaning manikin, i.e., the pupil of the eye (Prov. 7:2). (Comp. the promise, Zech. 2:8; the prayer, Ps. 17:8; and its fulfilment, Deut. 32:10.) The so-called "apple of Sodom" some have supposed to be the Solanum sanctum (Heb. hedek), rendered "brier" (q.v.) in Micah 7:4, a thorny plant bearing fruit like the potato-apple. This shrub abounds in the Jordan valley. (See ENGEDI.)

How is apple juice made when apples are not in season?
Lets say all apples in a particular country are collected in Septemeber. Also, this country does not import apples from other countries where apples are fresh and in season. Would the apple juice I drink in May be from the apples picked in Septmenber? If so, then there must be a lot of perservatives to keep it from going bad.Isn't that bad for my health?

Apples keep very well in cold storage. Probably better than any other fruit. That's why you see fresh apples in the markets year round, even U.S. apples. It is more cost effective to produce apple juice when the apples are in season, but it can be produced from apples that have been in storage as well. Apple juice usually does not contain artificial preservatives. It is sterilized and bottled, or frozen as concentrate. No preservatives needed.

How do you make apple cider from apple juice?
Is there a way to make apple cider from apple juice? I know it wouldn't "technically" be cider because of the processing and the apples aren't the first of the season, but I'm basically looking for the things I could add to apple juice to make it more cider-like. I assume cinnamon, nutmeg, cloves, and other spices and stuff, but I just wondered if anyone had a recipe or additional ingredients. Thanks!

Mulled Cider Recipe 1/2 cup of brown sugar 1 teaspoon of whole allspice 1 teaspoon of whole cloves 1/8 tsp ground nutmeg 3- inch stick cinnamon, broken up 2 quarts of apple juice Stir everything together in a saucepan and heat until just simmering. Let steep for at least 20 minutes or up to half an hour. Strain out the spices and serve into warmed mugs. This recipe will serve around 8 people. Hint: If you place the whole spices in a small cheesecloth bag, it will be much easier to take them out before
